You can use salmon steaks or halibut steaks or the whole fish - such as red snapper, pomfret or pompano in this dish.

Ingredients:

  • 1 pound salmon or halibut steaks or whole pompret or pompano
  • 2 cloves garlic sliced
  • 3 cups of tomato diced
  • 3 scallions chopped
  • 2-3 tablespoons of oil
  • 2 tablespoons of fish sauce
  • 1 tablespoon of sugar freshly ground black  pepper
  • 1/4 cup of chopped coriander
    flour to coat the fish
  • 2 tablespoons of rice wine or white wine (optional)

Preparations:

  • Lightly flour the fish, add oil into the non stick frying pan. Over high heat, add the fish and brown both sides well.
    Remove and set aside in a platter. Wipe the frying pan clean, add 1 tablespoon of oil. Brown the garlic, scallions; then add diced tomato, fish sauce, rice  wine (optional), sugar and black pepper. Let it simmer for 1-2 minutes.
  • Season to taste; then pour the sauce over the fish and sprinkle with chopped coriander.
  • Serve with steamed rice.
