Ube or violet yam is valued not only for its taste but mostly for its beautiful color. Grated and ground, it is made into haleya or jam that is molded in pans of different shapes or packed in bottles. In the olden days, to attain a uniform fine consistency, the ground ube was sieved using sinamay.

1 kilo ube, boiled and grated
2 cups coconut milk
2 cups evaporated milk
1 cups sugar
butter for greasing


1.  In a thick-bottomed pan, combine grated ube,
coconut milk, evaporated milk and sugar.

2. Cook over medium fire until very thick.

3. Stir constantly to prevent sticking.

4. Mold in greased pans. Cool.
