(Rice Pastry)

Ingredients:
2 c Malagkit rice flour
1-1/2 c Coconut milk, medium thick
3/4 c Granulated sugar
1/2 tsp Vanilla
1/4 tsp Fine salt

Directions:
1. Toast malagkit rice flour in wok until light brown in color. Cool. Set aside 1/2 cup.

2. Combine coconut milk and granulated sugar in a cooking pot. Boil. Lower flame to simmering.

3. Add vanilla and salt to coconut milk mixture.

4. Add malagkit rice flour, and stir continuously. Mixture will become thick.
Continue stirring until mixture becomes quite dry. Take care not to burn the mixture.

5. Remove from mixture from flame, and transfer to a board dusted with malagkit flour. (Use the 1/2 cup set aside.) Flatten mixture with a rolling pin to 1/4 inch thick and cut into small rectangular pieces. Roll in the rest of the toasted malagkit flour.
