K A R E - K A R E
(Tripe Curry in Peanut Sauce)

1 k Beef tripe
3 medium Eggplants,
cut into 1-inch cubes
1 bundle green beans,
cut into 1-inch pcs.
1 can Banana flower
1 c Peanut butter
1 medium Onion, sliced
5 cloves Garlic, crushed
2 tbsp Vegetable oil

1.  Boil beef tripe in a pot of water for 1-2 hours
until tripe is tender. Cut tripe into
2-inch square slices.

2.  In a separate sauce pan or wok, saute in
vegetable oil, garlic and onion the
rest of the vegetables for 10-15 mins.

3.  Add in peanut butter and stir for 10 mins.

4.  Add in the boiled beef tripe in the vegetable mix.
Simmer for 10 minutes.

5.  Serve hot with boiled rice.

6.  Use shrimp paste or fish sauce to taste
as garnish.
